A sugar alcohol is an organic compound, prepared from sugars or naturally occurring that is widely used in the food industry as sweeteners in place of table sugar.  Sugar alcohols are usually incompletely absorbed into the blood stream from the small intestines which generally results in a smaller change in blood glucose unlike the "regular" sugar. This unique property makes them popular sweeteners among diabetics and people on low-carbohydrate diets.
